yum, yum!

I LOVE food~ hands down no questions asked. I had two great meals this week that I had to share.
The first was a chimichanga with rice and black beans. I cooked the beef in the slow cooker with some beef broth and garlic and it came out super delicious. I added some sauteed garlic and onion to it and filled a whole wheat tortilla. Then I baked the chimichanga in the oven and topped it with cheese, lettuce, tomato and sour cream. I made these black beans but used tomato sauce with 1/4 cup water in place of the tomato juice. It was SOOOOO good- I want some more right now!
The second was delicious and super easy meatballs in the crock pot. I doubled the recipe, omitted the bacon and used cilantro instead of parsley. I froze them overnight then just pulled out the ones I wanted to use. I covered them in pasta sauce while they cooked since that was what we were going to eat and the smell was divine. Doubling the recipe gave us 76 meatballs which will be about 4 meals for us and I'm already looking forward to eating more. Perhaps, sweet and sour meatballs? Meatballs in gravy? Or meatballs in cranberry sauce? Yum.....
